Ingredients
  

  • 4 large eggs
  • 2 tablespoons milk
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon butter
  • ¼ cup diced onion
  • ¼ cup diced bell pepper
  • ¼ cup chopped tomatoes
  • 2 tablespoons chopped spinach
  • ½ cup shredded cheddar cheese
  • Fresh parsley for garnish

Method
 

  1. Whisk the eggs, milk, salt, and black pepper in a bowl.
  2. Heat butter in a non-stick pan over medium heat.
  3. Sauté the onion and bell pepper for 2–3 minutes.
  4. Add the tomatoes and spinach and cook for another minute.
  5. Pour the egg mixture over the vegetables.
  6. Cook until the eggs begin to set.
  7. Sprinkle the cheese over one half of the omelette.
  8. Fold the omelette in half and cook for 1–2 more minutes until the cheese melts.
  9. Garnish with parsley and serve hot with toasted bread.

Notes

Add mushrooms, sweet corn, or cooked chicken for extra flavor and protein.
