Ingredients
  

  • ½ cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • cups milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • Butter or oil for cooking

Method
 

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Gently fold in the blueberries.
  5. Heat a lightly greased non-stick pan over medium heat.
  6. Pour about ¼ cup of batter onto the pan for each pancake.
  7. Cook until bubbles appear on the surface, then flip and cook for another 2–3 minutes until golden brown.
  8. Repeat with the remaining batter.
  9. Serve warm with maple syrup, butter, and extra blueberries.

Notes

Do not overmix the batter to keep the pancakes soft and fluffy.
