Ingredients
For the Chicken
- 2 boneless skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 garlic cloves minced
- 1 tsp dried oregano
- ½ tsp paprika
- Salt and black pepper to taste
For the Quinoa Salad
- 1 cup quinoa
- 2 cups water
- 1 cucumber diced
- 1 cup cherry tomatoes halved
- ¼ cup red onion finely chopped
- 2 tbsp chopped parsley
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Method
- Rinse quinoa and cook with water until fluffy (about 15 minutes). Let cool.
- Mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
- Marinate chicken for 15 minutes.
- Grill chicken for 6–7 minutes per side until fully cooked.
- Combine cooked quinoa with cucumber, tomatoes, onion, parsley, olive oil, lemon juice, salt, and pepper.
- Slice the chicken and serve over the quinoa salad.
Notes
- Let the chicken rest for 5 minutes before slicing.
- Add avocado for extra healthy fats.
