Ingredients
  

For the Chicken
  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 garlic cloves minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and black pepper to taste
For the Quinoa Salad
  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber diced
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • 2 tbsp chopped parsley
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method
 

  1. Rinse quinoa and cook with water until fluffy (about 15 minutes). Let cool.
  2. Mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  3. Marinate chicken for 15 minutes.
  4. Grill chicken for 6–7 minutes per side until fully cooked.
  5. Combine cooked quinoa with cucumber, tomatoes, onion, parsley, olive oil, lemon juice, salt, and pepper.
  6. Slice the chicken and serve over the quinoa salad.

Notes

  • Let the chicken rest for 5 minutes before slicing.
  • Add avocado for extra healthy fats.
